Crispy Air Fryer Potato Wedges

Potatoes

For crispy wedges with super fluffy insides, choose a starchy roasting potato variety.

The recipe below uses Russet Potatoes, which are my go-to for this type of recipe. Idaho Potatoes are also a good option.

However, all purpose potato varieties, like Yukon Gold, should also give you good results.

You will need medium potatoes, that are all a similar size and shape. Ones that are elongated, rather than round, will cut into neat wedges more easily. Choose one potato per person for a standard-sized serving.

Melted butter and oil

This recipe uses a mixture of butter and oil to help the seasonings to stick to the wedges and get the wedges nice and crispy.

Melted butter adds a delicious creamy flavor to the wedges, and the oil raises the smoke point so help prevent the air fryer from smoking during cooking. If you prefer you can just use oil.

You can melt the butter in the microwave, on high for 10-15 second intervals until melted, then add the oil and mix.

Flour

You can use all-purpose flour for this recipe. Flour adds texture, to create a light crispy coating.

Parmesan Cheese

Parmesan cheese adds flavor and crunch to the coating.

Seasoning

This recipe uses a simple seasoning mix made from paprika, salt, ground black pepper, and garlic powder.

You can also switch up the seasonings if you like. Some other options that I like to use are:

  • Lemon pepper seasoning
  • Cajun seasoning
  • Paprika and cayenne pepper
  • Italian seasoning

If using a store-bought seasoning mix, ensure it has some salt in it, otherwise, add a teaspoon of salt. You need around three-and-a-half teaspoons of seasoning/salt in total.

How to cook potato wedges in the air fryer

This recipe is super simple to make, there are just a few key steps to getting it just right:

  1. Cut potatoes into wedges. Cut the potatoes lengthwise through the center, then each half into four wedges.
  2. Rinse and dry the wedges. Rinse the wedges under cold water to remove any surface starch. You can also soak them in cold water for up to 20 minutes if you have time. Then pat the wedges dry on paper towels or a clean dish towel.
  3. Oil and season the wedges. Placed the dried potato wedges into a large mixing bowl. Mix the oil and melted butter together, and pour over them. Toss to coat the wedges with the butter mixture. Then mix the flour, Parmesan, and seasonings together and sprinkle them over the potato wedges. Toss the wedges again to coat them thoroughly with the seasonings.

Drizzle the potato wedges with the oil/butter mix, add the seasonings and toss to coat thoroughly.
  1. Prepare the air fryer. Preheat the air fryer to 360°F / 180°C. Then, when it is preheated, give the basket a light brush or spritz with oil to stop the wedges from sticking to it

Tip

When choosing an olive oil spray for your air fryer, look for the type that spritzes rather than an aerosol. The propellant in aerosol oil sprays can damage the non-stick coating of your air fryer.

  1. Air fry potato wedges. Place the potato wedges in the air fryer basket in a single layer, and air fry at 360°F / 180°C for around 25 minutes until golden brown and crispy. Shake the basket halfway through the cooking time to flip the wedges over so they cook evenly.

Note: cooking times will depend on the size of your wedges, and how powerful your air fryer is. Air fry wedges for additional 5 minute intervals if required.

No air fryer? You can also cook these potato wedges in a conventional oven: arrange them on a baking sheet, and bake at 360°F / 180°C for 50 minutes, flipping them over halfway through the cooking time.

Serving ideas

One of the things that make these air fried potato wedges such a great dish is that they can be served in so many ways.

They can be enjoyed as a snack or appetizer, served with your favorite dipping sauce.

You can also serve them as a side dish to many kinds of food, such as burgers, sandwiches, or tacos.

Or try making loaded wedges by topping them with chili, sour cream, shredded cheese and guacamole.

Storing and reheating

Storing

Store any leftover potato wedges in an airtight container in the fridge, and use within 3 days.

For longer term storage you can store the leftover potato wedges in the freezer. Place in a freezer-safe zip-lock bag and store for up to three months.

Reheating

You can reheat the potato wedges in the air fryer. Place them in the air fryer basket and air fry for 5-6 minutes at 360°F / 180°C until they are heated through.

To reheat frozen potato wedges, do not thaw them first. They can be air fried from frozen, at 360°F / 180°C for around 10-15 minutes. See Air Fryer Frozen Potato Wedges for full details.

Ingredients

  • 4 medium Russet Potatoes [Note 1]
  • 3 tablespoons vegetable oil
  • 2 tablespoons melted butter
  • 3 tablespoons all-purpose flour
  • 3 tablespoons grated Parmesan cheese
  • 2 teaspoons paprika
  • 1 teaspoon salt
  • ⅛ teaspoon pepper
  • ⅛ teaspoon garlic powder

Instructions

  1. Cut the potatoes lengthwise in wedges. Rise the wedges under cold water to remove any surface starch, and pat dry with paper towels.
  2. Place the potato wedges into a large bowl, mix the butter and oil together, pour over the potatoes and toss to coat.
  3. Preheat the air fryer to 360°F/ 180°C.
  4. Mix the flour, Parmesan, paprika, salt, pepper and garlic powder together in a small bowl. Sprinkle over the potato wedges, and toss well until the potatoes are thoroughly coated with seasoning.
  5. Prepare the air fry basket by lightly brushing or spritzing with olive oil, or lining with baking paper. Then place potato wedges in air fryer basket in a single layer.
  6. Air fry potato wedges for 25-30 minutes [Note 2], tossing halfway through the cooking time to ensure they cook evenly.
  7. The potato wedges will the golden brown and crispy when they are done. If required, air fry for additional 5 minute intervals until cooked to your liking.

Notes

  1. Or choose another high starch potato variety like Yukon Gold.
  2. Exact cooking times will depend on the size of the wedges and how powerful your air fryer is.
