  1. Rinse the rice: To ensure you have fluffy Instant Pot coconut rice, start by rinsing your rice in a mesh strainer until the water runs clear. This helps to remove excess starch.
  2. Combine all ingredients for the coconut rice in the Instant Pot inner bowl.
  3. Ensure the valve is sealed, then set your Instant Pot to cook on high pressure for the specified time based on your chosen rice type:
    • Basmati rice 5 minutes
    • Jasmine rice 3 minutes
  4. When the pressure cooking time has finished, allow the Instant Pot to depressurize naturally for ten minutes, then use quick release to open it.

How to cook coconut rice in an Instant Pot.

Ingredients

  • 1 cup basmati rice or jasmine rice
  • 1 cup water
  • ¼ cup coconut milk
  • pinch salt

Directions

  • Rinse rice under running water using a mesh sieve. This removes the fine layer of starch on the outside of the grains, preventing them from sticking together. 
  • Place all the ingredients into the Instant Pot inner pot. Ensure that no grains remain stuck to the edge of the pot.
  • Close and lock the lid of the Instant Pot.
  • Set the Instant Pot to pressure cook at high pressure for:
    – 6 minutes for basmati rice
    – 3 minutes for jasmine rice
  • When the time is up, allow the Instant Pot to depressurize naturally for 10 minutes (using the keep warm function). After this time you can press cancel and use quick release to finish depressurizing before opening the Instant Pot.
