How to Make French Onion Chicken in an Instant Pot

This recipe is very easy to make, but there are a few essential steps to get it just right (full instructions are given in the recipe card below).

  1. Saute the onion and brown the chicken. This helps to develop the rich flavor of the dish, and keeps the chicken juicy.
  2. Deglaze the pot with stock, pour in the onion soup and let everything simmer to thicken the sauce.
  3. Pressure cook the casserole.
  4. Cover the chicken thighs with cheese and melt until gooey.
  5. Serve, and enjoy!

How to cook French onion chicken in an Instant Pot.

  • 1¼ lbs./ 600g boneless, skinless chicken thighs
  • 1 medium onion, peel and sliced
  • 1 tablespoon unsalted butter
  • ½ teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 can French onion soup
  • 1 cup beef stock
  • Optional: 2 tablespoons white wine
  • 6-8 thin mild (non-smoked) Provolone cheese slices [Note 1]
  • Drizzle olive oil
  • Salt and pepper

  1. Select the 'Sauté' function and adjust to the medium setting. Add the butter and olive oil and stir until butter is melted and evenly distributed across the bottom.
  2. Add onion slices and sprinkle with the garlic powder and Italian seasoning. Sauté, stirring occasionally, until the onions are soft and translucent, approximately 5 minutes.
  3. Generously season the chicken thighs with salt and pepper and place in the Instant Pot smooth side down. Cook for 3-5 minutes until browned, then flip them over and repeat.
  4. Add the stock, onion soup and white wine (if using), then use a spatula to carefully release any browned bits from the bottom of the pot.
  5. Simmer until the liquid has reduced by around one half, then press 'Cancel' to end the Saute program.
  6. Add the lid and lock into place, making sure the pressure release valve is set to 'Sealing' Select the 'Manual' button on the highest setting and adjust the cook time to 8 minutes.
  7. When the cook time is complete, allow the pressure to naturally release for 5 minutes, then use quick release to open the Instant Pot.
  8. Carefully place the cheese slices on top of the chicken thighs and place the lid back on the Instant Pot for 3-4 minutes, or until the cheese is thoroughly melted.

  1. You can also use mozzarella, gruyère, Swiss, or comté cheeses. Sliced is best, but grated also works.
