These Instant Pot Mashed Sweet Potatoes are the perfect side dish for your holiday feast! They're smooth and creamy, and oh-so-delicious. They're super easy to make in the Instant Pot, and even better you can make them sweet or savory, depending on your mood.
Peel the sweet potatoes and cut into equal-sized pieces approximately 1-inch across.
Place sweet potatoes in the Instant Pot inner pot, and cover with water {Note 2].
Close the lid, set the valve to 'Sealing', and pressure cook sweet potatoes on HIGH for 8 minutes. Then use the quick release to open the Instant Pot.
Drain the cooking water out of the Instant Pot bowl [Note 3].
Place the sweet potato chunks back into the Instant Pot, add the butter and cream, then use a potato masher to mash the potatoes until light and fluffy.
Notes
Or substitute milk for a lighter version.
Place sweet potatoes in a steamer basket if you have one to make draining them easier later.
Use a colander, or if you used a steamer basket, carefully lift the basket out before discarding the remaining cooking water.
