Peel the potatoes and cut into equal-sized pieces approximately 2 inches (4-5cm) across.
Place potatoes in the inner pot of the Instant Pot, and cover with water.
Close the lid, set the valve to 'Sealing,' and pressure cook potatoes on HIGH for 8 minutes. Then use the quick release to open the Instant Pot.
Add the butter and milk, then use a potato masher to mash the potatoes until light and fluffy. Add salt to taste and mix well.
Notes
Choose a floury or all-purpose type of potato. Try russet potatoes, Yukon gold potatoes, red potatoes, Maris Piper, or Sebago.
Or substitute heavy cream.
