Instant Pot Peach Cobbler

Instant Pot peach cobbler is a quick and convenient way to make a classic dessert without using your oven. Serve it with a big scoop of vanilla ice cream for a dessert that the whole family will love!

How to make peach cobbler in an Instant Pot

I love the taste of peach cobbler with the sweet, buttery topping and juicy peach filling. It is quick and easy to make, and you can make it in your electric pressure cooker, if your oven is otherwise occupied (or it is one of those hot summer days where you can bear to turn the oven on). 

Cooking desserts like fruit cobbler in an Instant Pot is quick and easy, however you are never going to get the same crisp results that you would get with an oven-baked cobbler (or this air fryer peach cobbler).

However, that is nothing that a few minutes under a hot broiler won’t fix, so if you are after a crispy cobbler topping then I urge you to take this optional step once it has finished in the pressure cooker.

Equipment 

For this recipe you need a baking dish that will fit inside your Instant Pot. The dish needs to have a capacity of around 4 cups, be made of an oven-safe material and be able to fit inside the Instant Pot without touching the sides. I use a 6½ inch round glass baking dish with a 3 inch depth.

This is the perfect size for 4 servings. I you want to make a 2-serving peach cobbler then follow the instructions in my Instant Pot Apple Cobbler recipe, using peaches in place of apples.

I have a 6 quart (5.5L) Instant Pot, and so add 1 cup of water for the pressure cooking. If you have an 8 quart Instant Pot then use at least 2 cups of water. For other sizes or other brands, check your manual to find out the minimum liquid requirement.

Ingredients

Quantities for all ingredients are given in the recipe card below. 

Peaches: you can use fresh peaches, canned or frozen peaches for this recipe. If you are using fresh peaches it is best to peel them first. If you are using canned peaches in syrup then you do not need to add additional sugar to the fruit, just drain the peaches and they should be sweet enough. Canned peaches in juice can have sugar added if you like. 

Sugar: This recipe uses regular granulated sugar, but feel free to swap in any other type of sugar. Soft brown sugar or coconut sugar are both great options.

All purpose flour: All-purpose flour is used for the batter. I don’t recommend substituting bread flour as this can give you a really gummy topping rather than the usual crumbly topping. 

Baking powder: Baking powder helps the cobbler batter to rise as it is cooking. (note: be sure to use baking powder not baking soda!)

Milk: To make the batter. I use regular full-fat dairy milk, but half-and-half is also fine. I haven’t tried using a plant-based milk in this recipe yet, but if you try it please let me know in the comments below!

Melted butter: Use good quality butter if you can as the beautiful buttery crust is a really key part of this dish. I use a microwave-safe container to make this Instant Pot cobbler, so I just pop the butter in the dish and microwave it for a few seconds before assembling the cobbler. 

Ground cinnamon: Gives the dish a lovely warming flavor. You can substitute ground nutmeg or pumpkin spice if you prefer.

Directions

Step 1: Prep the Instant Pot. Place the trivet into the Instant Pot bowl, and add 1 cup of water.

Step 2: Prepare the filling. Place peach slices in a medium bowl with the sugar for the filling, mix thoroughly and set aside while you make the batter.

Step 3: Make the batter. Melt the butter (~30 seconds in the microwave) and place in a 7-8 inch baking dish or pie dish (at least 2 inches deep). Mix the flour, sugar for the batter and the baking powder together with the milk into a thick batter.

Step 4: Assemble the cobbler. Pour the batter on top of the melted butter, then place the peach mixture on top. Sprinkle with some ground cinnamon.

Step 5: Cover and seal the baking dish with kitchen foil, and carefully place it onto the trivet inside the Instant Pot. Place the Instant Pot lid on top with the valve set to sealing.

Step 6: Pressure cook peach cobbler. Set the Instant Pot to pressure cook for 35 minutes on HIGH, then allow it to naturally release for 10 minutes before using quick release to release the rest of the pressure. When the float valve drops, open the Instant Pot and carefully remove the peach cobber dish from the Instant Pot (use oven mitts). Remove the foil.

Optional step 7: To crisp up the top of the cobbler, place it under a hot broiler for 5-10 minutes until it is golden brown and crispy.

Serving

You can serve the peach cobbler hot or cold. My favorite is to serve it piping hot with a big scoop of vanilla ice ream melting on the top. Divine!

Storing and reheating

Store any leftover cobbler in an airtight container in the refrigerator and use within 3-4 days.

You can reheat the cobbler in the the microwave, for around 1 minute on HIGH.

Fruit Filling

  • 2 cups sliced peaches

  • 2 tablespoon salted butter
  • ½ cup all purpose flour
  • ½ cup granulated sugar
  • 1 teaspoon baking powder
  • cup milk

Directions

  • Place the trivet into the Instant Pot bowl, and add 1 cup of water.
  • Place peach slices in a bowl with the sugar for the filling [Note 1] and set aside.
  • Melt the butter and place in a 6 inch baking dish or pie dish [Note 2, Note 3].
  • Mix the flour, sugar for the batter and the baking powder together with the milk into a thick batter.
  • Pour the batter on top of the butter, then place the peach filling on top including any juices. Sprinkle some ground cinnamon on top of the peach slices.
  • Cover and seal the baking dish with kitchen foil.
  • Carefully place the baking dish onto the trivet inside the Instant Pot, and place the lid on top with the valve set to sealing.
  • Pressure cook the peach cobber for 35 minutes on HIGH, then allow it to naturally release for 10 minutes.
  • Manually release the remaining pressure. Then carefully remove the peach cobber dish from the Instant Pot (use oven mitts).
  • Optional step: To crisp up the top of the cobbler, place it under a hot broiler for 5-10 minutes until it is browned to your liking.
  • Serve topped with a big scoop of vanilla ice cream. Enjoy!

Notes

  1. If using canned peaches in syrup you can skip the additional sugar.
  2. Use a baking dish with a capacity of ~4 cups.
  3. If using a microwaveable baking dish, place the butter straight into it and use the microwave to melt it – approx 30 seconds.
