Old meets new with this traditional peach cobbler made in the Instant Pot! Classic buttery juicy peach cobbler made without using your oven. Serve it with a big scoop of vanilla ice cream for an irresistible summer dessert the whole family will love!
I love peach cobbler – the sweet, buttery topping and juicy peach filling are so delicious together. It is quick and easy to make (you can use canned peaches!), and you can cook it in the Instant Pot, so there’s no need to turn your oven on if it’s one of those hot summer nights.
What do you need?
For this recipe you need a baking dish that will fit inside your Instant Pot. The dish needs to have a capacity of around 4 cups, be oven-safe, and able to fit inside the Instant Pot without touching the sides. I use a 6½ inch round glass baking dish with a 3-inch depth.
I have a 6 quart / 5.5L Instant Pot, and so add 1 cup of water for the pressure cooking. If you have an 8 quart Instant Pot then use at least 2 cups of water. For other sizes or other brands, check your manual to find out the minimum liquid requirement.

Quantities for all ingredients are given in the recipe card below.
- Peaches: you can use fresh, canned or frozen peaches for this recipe. If you are using fresh peaches it is best to peel them first. If you are using canned peaches in syrup then you do not need to add additional sugar to the fruit, just drain the peaches and they should be sweet enough. Canned peaches in juice can have sugar added if you like.
- Sugar: I use regular granulated sugar to make this recipe, but you can use soft brown sugar or coconut sugar if you prefer.
- Flour: Use all-purpose flour (standard grade) to make the batter. Or you can substitute self-raising flour and skip the baking powder.
- Baking powder: Baking powder helps the cobbler batter rise as it cooks (note: be sure to use baking powder, not baking soda!).
- Milk: I use regular full-fat dairy milk, but half-and-half is also fine.
- Melted butter: Use good quality butter if you can as the beautiful buttery crust is a really key part of this dish. I use a microwave-safe container to make this Instant Pot cobbler, so I just pop the butter in the dish and microwave it for a few seconds before assembling the cobbler.
- Ground cinnamon: You can substitute ground nutmeg or pumpkin spice if you prefer.
Tip: Crisp it under the broiler
Cooking desserts like fruit cobbler in an Instant Pot is super convenient. You’re never going to get the same crispy top that you’d get with an oven-baked cobbler, but luckily that’s nothing that a few minutes under a hot broiler/ grill won’t fix!
Once the cobbler has finished pressure cooking, remove the foil covering and place the dish under the broiler for 5-10 minutes until it is golden brown. Just remember to keep an eye on it so it doesn’t burn!
You can serve the peach cobbler hot or cold. My favorite is to serve it piping hot with a big scoop of vanilla ice cream melting on the top. Its also great with vanilla custard, or drizzled with caramel sauce.
Instant Pot Peach Cobbler
Ingredients
Fruit Filling
- 2 cups sliced peaches peel first if using fresh peaches
- ¼ cup granulated sugar Note 1
- ½ teaspoon ground cinnamon
Cobbler batter
- 2 tablespoon salted butter
- ½ cup all purpose flour
- ½ cup granulated sugar
- 1 teaspoon baking powder
- ⅓ cup milk
Instructions
- Place the trivet into the Instant Pot bowl, and add 1 cup of water [Note 2].
- Place peach slices in a bowl with the sugar for the filling [Note 1] and set aside.
- Melt the butter and add to a dish or pie dish [Note 3].
- Mix the flour, sugar for the batter and the baking powder together with the milk into a thick batter.
- Pour the batter over the butter, then add the peach filling, including any juices. Sprinkle some ground cinnamon over the top.
- Cover and seal the baking dish with kitchen foil.
- Carefully place the baking dish onto the trivet inside the Instant Pot, then secure the lid with the valve set to 'Sealing'.
- Pressure cook the peach cobbler for 35 minutes on HIGH, then allow it to naturally release for 10 minutes before releasing the remaining pressure.
- Carefully remove the peach cobber dish from the Instant Pot (use oven mitts).
- Optional step: To crisp the top of the cobbler, place it under a hot broiler for 5-10 minutes until it is browned to your liking.
Notes
- Use the minimum amount recommended for your pressure cooker.
- If using canned peaches in syrup you can skip the additional sugar.
- Use a pressure cooker safe baking dish with a capacity of ~4 cups.
