These wonderfully crunchy accordion potatoes are a fun twist on traditional roast potatoes or fries. They are sliced to create extra surface area, which maximizes the crunch factor when they are air fried.
Air fried accordion potatoes are insanely crunchy
I love crunchy golden potatoes in any form (chips, wedges, roast potatoes, etc), but air fried accordion-style potatoes are simply unbeatable when it comes to crunchy potato perfection! The vertical cuts create extra edges that get crispy and golden to maximize the crunch while they stay perfectly soft and fluffy on the inside. The best of both worlds in every single bite.
What do you need?
- Potatoes: I usually choose yellow potatoes (like Yukon Gold) to make this recipe. They are in between starchy and waxy, meaning they will crisp up and stay fluffy, but not fall apart when cooked. You can substitute any all-purpose potato variety.
- Oil: I used light olive oil to make this recipe, but you can substitute another neutral oil with a high smoke point, such as avocado oil or grapeseed oil.
- Salt: Salt adds flavor to this recipe. Feel free to skip it for a low salt version, or substitute another seasoning if you prefer.
Let’s make these accordion potatoes in the air fryer!

Prepare and preheat.
Peel the potatoes, cut into slices around 1cm/ half inch thick, then rinse under cold water and pat dry.
Preheat the air fryer to 180°C/ 360°F. If your air fryer doesn’t have a preheat mode, just set it to air fry for 3-4 minutes.

Cut the potatoes.
Place a pair of skewers or chopsticks on either side of the potato slices (so you don’t cut the whole way through), then make vertical cuts into the potato slices around ½ cm/ ¼ inch apart.
Then flip the potato slices over and cut the other side in the same way, diagonally to the direction of the previous slices.

Add oil.
Drizzle the potatoes with oil, and sprinkle with salt.

Air Fry.
Put the prepared accordion potatoes into the air fryer basket in a single layer, and air fry for 30-35 minutes, or until golden brown and crispy. Make sure to flip them over halfway through so they cook evenly.

Air Fryer Accordion Potatoes
Ingredients
- 2 lbs yellow potatoes (or all-purpose)
- 1.5 tbsp olive oil
- ½ teaspoon salt
Directions

- Place the potato slices on your cutting board and make vertical cuts into the potato slices around ½ cm/ ¼ inch apart. Place skewers or chopsticks on each side, so you don’t cut the whole way through.
- Flip the potato slices over and cut the other side the same way, diagonally to the previous cuts.
- Drizzle the potatoes with oil, season with salt, and toss to coat thoroughly.
- Place the in the air fryer basket in a single layer, and air fry at 180°C/ 360°F for 30-35 minutes, flipping them over halfway hallway through. Cook until golden brown and crisped up to your liking.
