Sizzling, satisfying, and ready in no time – these air fryer chicken fajitas are a weeknight wonder. Wrap the savory filling in warm tortillas, add your favorite toppings, and enjoy a lively Mexican-inspired meal any night of the week.
I love this recipe because it’s so simple, there’s none of the mess and hassle of stove-top cooking, yet it’s also totally delicious.
The filling is quick to prepare, and you have plenty of time to prep the tortillas and toppings while it cooks in the air fryer. It’s become a regular in my meal rotation, and my family always looks forward to fajita night!
Simple ingredients
- Chicken: Go for boneless, skinless chicken breasts or thighs. Slice them into strips for quick cooking and easy eating. You’ll need around 150g/ ⅓lb per person.
- Bell Peppers: Mix it up with different colors! Red, yellow, and green peppers add great flavor and make your fajitas look amazing. Just slice them into thin strips.
- Onions: Red or white onions work well here. Slice them thinly into half moons.
- Fajita Seasoning: You can grab a pre-made mix or whip up your own with chili powder, cumin, garlic powder, salt, and pepper.
- Olive Oil: A light olive oil is perfect for this recipe. It helps everything cook evenly without overpowering the other flavors.
- Tortillas: Whether you prefer flour or corn, 6-8 inch tortillas are just right. Don’t forget to warm them up before serving!
- Toppings: Here’s where you can get creative! Try sour cream, guacamole, salsa, shredded cheese, or fresh cilantro. Mix and match to find your favorite combo.
Let’s make these chicken fajitas in the air fryer!
1
Prepare.
Cut the vegetables and chicken into bite-sized pieces. Toss together in a bowl with a drizzle of oil and the seasoning.
2
Pop it in the air fryer.
Preheat the air fryer to 200°C/ 400°F (if your air fryer doesn’t have a preheat mode, just set it to air fry for 3-4 minutes). Then pop the chicken and veggies in the air fryer basket.
3
Air fry.
Air fry the fajita filling at 200°C/ 400°F for 10-14 minutes until the chicken is cooked through. Shake the basket to redistribute the food (or toss quickly with tongs) a few times during cooking to ensure it cooks evenly. Check that chicken is cooked through. If not, cook for 1-2 minutes more.
4
Serve.
While the fajita filling is cooking, prepare the toppings. Warm the tortillas in the microwave or on a skillet, grate the cheese, chop the cilantro.
Place a generous portion of the cooked chicken and veggies onto each tortilla, pile with toppings, and enjoy!
Variations and Serving Ideas
- Try steak strips or shrimp instead of chicken. Or use portobello mushrooms or firm tofu for a vegetarian version.
- Mix up the veggies, or add extras, try zucchini slices or mushrooms.
- Swap tortillas for large lettuce leaves for a low-carb option. Butter lettuce or romaine hearts work great!
- Serve over rice or quinoa for fajita bowls. Add some black beans or refried beans, and top with guacamole.
- Make a fajita bar for easy serving. Put out bowls of toppings and let everyone build their own. This works great for parties or family dinners.
