Air Fryer Parmentier Potatoes (mini roast potatoes)
Crispy, golden, and just the right amount of garlic and herbs, these air fryer parmentier potatoes (mini roast potatoes) are an elegant alternative to roast potatoes or fries.

They cook up beautifully in the air fryer for maximum crispiness without the fuss. They’re simple, delicious, and a dish you’ll make again and again because you can serve them with everything from a Sunday roast to chicken nuggets.

Ingredients notes
- Roasting potatoes. Choose a variety that roasts well, like Russet, Yukon Gold, Maris Piper, or King Edward. These hold their shape while turning fluffy inside.
- Light olive oil. Helps the potatoes crisp up without burning. You can swap for another neutral oil with a high smoke point, like canola or sunflower oil.
- Rosemary. Fresh rosemary gives the best flavour, but dried rosemary works too (use about a third of the fresh amount). Remove leaves from the stem and roughly chop if fresh; crush slightly if dried.
- Garlic powder. to keep things simple I use garlic powder to season this recipe, but you can use fresh crushed garlic if you prefer.
- Fine sea salt. Table salt works too, but reduce slightly if it’s very fine.
How to make parmentier potatoes in the air fryer
1 Prep the potatoes
Wash and peel the potatoes. Peeling gives a smoother, more even crisp, but you can leave the skin on for extra texture if you prefer.
Cut into small cubes about 1-1.5 cm (½ inch) across. Try to keep the pieces roughly the same size so they cook evenly.
Rinse the potato cubes to remove the surface starch (or soak for up to 20 minutes), then pat dry and place in a large bowl.
2 Preheat + season the potatoes
Set the air fryer to preheat to 360°F/ 180°C for a few minutes while you season the potatoes. A hot air fryer helps the potatoes start crisping right away.
Drizzle the oil over the potatoes and sprinkle with the rosemary, garlic powder, and salt, then toss gently until all pieces are lightly coated in the oil and seasoning. Aim for a thin, even layer of oil for maximum crispiness without greasiness.

3 Arrange in the air fryer
Spread the potatoes in a single layer in the air fryer basket. Avoid piling them on top of each other if possible. Overcrowding traps steam and prevents crisping.
If needed, cook them in batches, or shake the basket often during cooking to release the steam and redistribute the potatoes.

4 Cook
Air fry the parmentier potatoes for 20 minutes, shaking the basket or gently flipping the potatoes halfway through so they brown evenly on all sides.
Check for doneness: the outside should be crisp and deep golden brown. If they’re not quite there yet, cook for another 2-3 minutes and check again.
Once done to your liking, serve immediately while hot and crispy.

Pro tips for success:
- If using dried rosemary, add it at the same time as the oil so it rehydrates slightly during cooking.
- If you want extra crunch, dust the potatoes with a teaspoon of fine cornmeal before air-frying.
- Keep the potato cubes small, larger pieces take longer to cook and may brown before softening inside.
- For extra crispiness, parboil the potato cubes for around 5 minutes before air frying, allow to steam dry before tossing with oil.


Air Fryer Parmentier Potatoes
Ingredients
- 2 lb / 900 g roasting potatoes [Note 1]
- 2 tablespoons light olive oil
- 2 teaspoons fresh rosemary (finely chopped) OR 1 teaspoon dried rosemary
- ¼ teaspoon garlic powder 1 clove crushed
- 1 teaspoon fine sea salt
Instructions
- Peel potatoes, cut into 1-inch cubes. Rinse to remove the surface starch, then pat dry, and place in a large bowl.
- Preheat air fryer to 360°F/180°C.
- Drizzle potato cubes with oil, and sprinkle with the rosemary and garlic powder, then gently toss to coat.
- Place the seasoned potato cubes in the air fryer in a single layer. Air fry at 360°F/180°C for 20 minutes, shaking the basket to redistribute the potato cubes 1 or 2 times during cooking [Note 2].
- When cooked, the parmentier potatoes should be golden brown and crispy. Air fry for an additional 2-3 minutes if required until they are just right.
Notes
- Choose a roasting variety, such as russet potatoes, Yukon Gold, Sebago, Maris Piper, Agria, or another red, yellow or golden variety.
- Shake the basket to redistribute the potatoes so they cook easily, or use tongs to quickly flip them if you have a tray type air fryer.
Leftovers
Store any leftover parmentier potatoes in an air tight container in the fridge. Use within 3 days. Leftovers can be eaten cold, or you can reheat them in your air fryer. Place potatoes in the air fryer basket, and cook for 5 minutes at 360°F/ 180°C until hot.Nutrition
