This is the air fryer version of my 5-ingredient vegan banana bread, with the ingredients reduced to fit a 7-inch loaf pan, which is the size I use in my air fryer. You might also like to try my recipe for air fryer banana muffins.

Ingredients

All quantities given in recipe card below.

Bananas: You will need 2 medium-sized bananas. They are best when they’re very ripe as this makes them easier to mash smooth and sweetens the recipe so you need less sugar.

Sugar: I usually use soft brown sugar, but you can also use white granulated sugar. You need 1/4 cup.

Oil: light olive oil is great, but you can substitute any neutral flavored cooking oil.

Flour: use all purpose flour, bread flour will result in a chewy, gummy texture.

Baking soda: be sure to use baking soda, not baking powder. This helps the bread to rise making the loaf lighter in texture.

Optional: You can add up to half a cup of extras, like chocolate chips, chopped walnuts, or chopped dates.

Directions

Prep: Line a 7 inch loaf pan with baking paper.

Make batter: In a large mixing bowl, mash bananas using a fork (or a potato ricer). Add the flour, sugar, oil and baking soda. Mix until well combined. You want the mixture to be quite smooth, with no lumps of flour remaining.

Preheat the air fryer to 320°F/ 160°C.

Bake: Pour or spoon the mixture into the baking dish. Air fry banana bread 30 minutes, or until a cake tester (or skewer) inserted into the center of the loaf comes out clean.

Cool: Allow the loaf to cool in the tin for 5 minutes and then turn out onto a cooling rack to cool completely.

Replace the flour with gluten free plain flour on a one to one basis and you’ve got a better banana bread than you can buy! If your pan is a little bigger it is simple to go to a 3 banana version which needs about 3 minutes more cooking.
